Mozza-Bacon-Steak Bites!

Another awesomely low carb meal!

Got the idea from http://www.sinorslim.com.

Ingredient List

Steak (I used 2 lbs of sirloin)

A normal sized box of Mozzarella string cheese

A pound of bacon

1. Get some steaks. I got 2 lbs of sirloin (on sale for 3.99 a pound… what…).

2. Trim off the fat, and cut into cubes of just smaller than 1 inch by 1 inch. This isn't super exact, don't stress.

3. Strip off a bit of string cheese, and cut a piece of bacon in half, and wrap up a cube of steak. Jab with toothpicks to keep everything together. Set them aside. Again, not real exact. This might take a while. When you've only got a dozen or so left to do, put a large frying pan on the stove, medium-high heat, and preheat the oven to 400 degrees.

4. Throw all of your steak bites into the hot pan. Get a cookie sheet ready for transfer! Line your cookie sheet with aluminum foil! Turn the steak bites until the steak starts to cook.

5. Move the steak bites around until the bacon starts to crisp. Once they're all almost crispy, put the bites onto a cookie sheet, and put it in the oven for 7 minutes.

6. Enjoy!

The only carb content here is the mozzarella cheese, and each bite only uses 1/5th or so of a stick. Delicious!

Butter Parm Shrimp - Easy! - Recipe

In the shrimp vein, I've got something else for you to cook up, again, very low carb.

Take a stick of butter and melt it in a pan.

Throw a bit of garlic in there, it can be the jar kind, or fresh if you're fancy. Put your shrimp in, in an even layer. Cover and leave it alone for a while.

After they're all nice and pink (no more visible grey), cover with parmesan cheese (fresh if you can!). Recover to let it get all melty.

Dump in a bowl and eat with some greens!

Firehole Shrimp Salad - Recipe!

Well, I got cooking tonight, and shrimp was on sale. Made lunch for tomorrow!

Start off with a pound of shrimp.

Slap that stuff right into a hot pan, at about medium heat. Spray the bottom of the pan with cooking spray very lightly, so it doesn't stick. Spread them out evenly.

Salt and pepper to taste, and throw a bit of chili powder in there (for good measure!). Leave them cook until they are the right color (you know what I mean). Crispy is good!

Chop them up into thirds, smallish pieces. We don't need shredded shrimp, but small pieces is good. Throw them in a mixing bowl with a cup of real mayonnaise, a half cup of shredded cheddar cheese, and a up to a tablespoon of Sriracha.

You think that looks pretty good? Me too. But its not quite ready, it needs… Bacon. Yep. Get some nice thick bacon.

Throw two pieces on a paper plate, with paper towels underneath. A minute and a half on each side in the microwave, and chop it up nice, crumble it, even.

Mix it all in. I use "Artisan Lettuce" romaine lettuce to make my lettuce wraps. Spoon that goodness into the lettuce!

Vegan Ice Cream - Crush that Sweet Tooth!

Alright, so… I wanted ice cream, and I remembered that I got an ice cream maker as a wedding present. Neat, right?

So, after a bit of googling, I made some ice cream that is really very good, and decent for you too!

Ingredients:

  • 1 can (13.5 oz) Coconut Milk
  • 1/3 cup Light Agave Nectar
  • 1 Tablespoon Cocoa Powder
  • 1 Teaspoon Vanilla

This recipe makes a little over 16 oz of ice cream, so if you're using a ceramic container (like I am), throw it in the freezer awhile to chill it out.

Combine all ingredients into a bowl and whisk it until its all mixed up.

Toss it in the ice cream maker, and let it do its thing for 20 minutes or so, until its the consistency of… you guessed it, soft ice cream!

Use a spatula to scoop it all into your container (from the freezer), and freeze it for about 4-5 hours. Enjoy! (note, pay no attention to the frozen bacon fat.)

You can make a ton of different flavors, I just used Cocoa and Vanilla for this. I've also used 1 Tablespoon cinnamon, and its very good!

For the entire batch, the total nutrition facts are:

  • 989 Calories
  • 63.5g Fat
  • 100.8 carbs

Its really good!

Low Carb Whipped Cream - Try 1

Its a Monday night, and after steak and greens (again, favorite meal, so what?), I had a bit of a sweet tooth. So, I looked in my fridge, saw a pint of heavy whipping cream, and decided to try my hand at low-carb whipped cream.

The recipe I used is as follows:

2 cups Heavy Whipping Cream

2 Tablespoons Splenda (roughly 20 packets, or so?)

2 Teaspoons Vanilla Extract

Yields: Roughly 4 standard ramekins

Whisk that shit together until its nice and creamy. A powered hand mixer helps a lot… Don't attempt with a whisk, unless you're trying to burn calories… a lot of them.

I love this stuff, and will continue to make it… But there is a chemical after-taste. I want to try this recipe with agave nectar, or a mix of agave nectar and Splenda to try to rid this thing of the chemical taste as much as I can. Obviously, agave nectar isn't chemical, so, I think its going to come down to consistency.

I've also popped two containers in the freezer, to see how this stuff firms up. Could be on to something good here! Next time, with picture… Was a spur of the moment thing!
